My MS2 uses a GM cooling sensor and it is usually in the 200

I wouldn't worry about it until it goes up to 220 or something like that. My stock coolent temp sensor for the dash is still plugged in and it reads normal at 200

How I tuned my idle is:

Shut off all enrichments and things that would modify the Base fuel map
accel, decel fuel, coolant correction, off idle performance, idle fuel, air temp enrichment

*just to add, the reason why it is bucking is probably because of your accel fuel enrichment isn't high or low enough but forget this right now.

Turn up your idle screw a couple of turns (this will prevent it from dying out at idle and warms up the car pretty fast)

warmed up your car so it is at operating temps.

Then tuned the base fuel map idle by ear

Reason of not using your WB is depending on your cam, you may need to run richer then 14.7
I know I had to change my base tune when I installed my 272 I think mine is at 14.0-13.5 and runs just fine like that

*Also at Idle I have the computer look at the throttle Position because with the bigger cam, I loose vacuum at idle which throws off my MAP sensor.

*My accel enrichment is a blend of MAP reading and TPS reading but again all of that is shut off when tuning just the base fuel map

Next you have to dial in your base map which means no hard pulls. Just running the car up the RPM little by little to dial in the Fuel map. This is where you would use the O2 sensor. I don't know what AEM has but MS2 has megalog which is a program that will help you dial in the base fuel map. Really helpful

To make it short. Once you have the fuel map set, you can leave it and never have to change it again unless you mod the car with something else.

After the fuel map is dialed in, you can change your enrichments

Tuning becomes addicting once you figure out how to. There is a steep learning curve however
