My car has always run within a few degrees of the thermostat. As long as there are no blocked passages and your cooling system is good, it should always stay at the temp under normal conditions.

Have you checked your radiator for internal corrosion or corroded fins? My old stocker was missing the bottom 3" of cooling fins when I pulled it out, it wasn't readily visible in the car.
