This slows/stops warm water from moving north through the Atlantic. Since warm air/water stop moving north, it gets colder. This is actually how an "Ice-age" gets started. It could only take 10 years of this to completely stop the "conveyer", but 100 years to get it started again.
Basically that's what happened in the movie... The Day After Tomorrow. The movie may have been a little extreme, but it's the same concept.
