It Gets Hot

My 1G gets really hot on 90+ days but if its nice out it stays at 197 or so. Some cars are just different. Cher I wouldnt worry in your situation because your ca is not even getting hot. The stock thermostat operating range is starting to open at 190 and fullly open at 206.... so using a 180 will only open it sooner but top off is still going to be the same.

Its all in the fans you have, mine are pretty small so they dont like to keep it cool enough on hot days at stop lights.
