Serious $500 valuation problem here, they probably don't come up that much on Craigslist and to find 10 of them for around $500 or less would be hard.

You've seen how ugly my Galant is. I'm sure there'd be some leeway on the $500.

Could always set it up n/a & fwd.

well unfortunately its not necessarily about your specific car as it is your 10 AIV ads from the internet, average of which being your value. Any mods are added on top of that.

I can find plenty of rough 91 Galants for around $500

I cannot find many running Civics or BMWs for that kind of $$$ though

Why not just make a few adds? Who's going to know and as long as you really paid less then $500 or even got it for free then what does it matter?
